  3. 1 teaspoon ghee
  4. 1/2 cup yughurt
  5. Water 1/4 cup ( more or less add gradually to make thick batter
  6. 1/8 teaspoon Baking soda
  7. For Sugar syrup:
  8. 2 cups Sugar
  9. 1 1/2 cups Water
  10. 2-3 cardamoms

Steps to make to make Jalebi

  1. Preparation: •In a large mixing bowl add flour and ghee and rub it well with fingers. •Add yoghurt and mix it again, then add water gradually into it with a help of whisk or fork. The mixture will turn lumpy.(Not too runny or not too thick)
  2. Add food colour if you want. •In last step add baking soda, mix it again. •Now cover the mixing bowl with cling film and leave it for at least 30 minutes in a warm place.
  3. 🔵Meanwhile let's prepare sugar syrup. •Place a pan over medium heat and add water then sugar with 2 or 3 cardamoms. •Let it boil and then simmer it for 2 minutes. •Switch off the flame. Remove from heat and keep warm.
  4. After 30 minutes check the batter. •If it is very thick, add very little water and make the batter to correct consistency the batter should be thick at the same time in pouring consistency. •Pour the batter in bottle. To make jalebi I have used ketchup bottle.(nozzle sort)
  5. 🔵Frying Jalebi •Pour oil in a wok over medium heat. drop a tiny drop of batter into the oil. •It should immediately come to the surface without changing the colour. •Squeeze the bottle in hot oil in close spiral motion from inside to outside. Deep fry till both the sides of Jalebi becomes golden and crisp. •Remove the jalebis from oil and put them in the sugar syrup.(lukewarm).Flip and turn to make sure make sure sugar syrup is evenly coated on both sides. Remove from syrup and serve.
