The chicken lollipop is primarily a frenched chicken winglet, in which the meat is cut loose from the tip of the bone and pushed down creating a lollipop appearance. It is usually served with Shechewan sauce. Lollipops are coated in a spicy red batter that includes red chili powder, turmeric. And also marinated for couple of hours. Marinated chicken is then deep-fried in oil or baked. The exposed bone is sometimes wrapped in aluminum foil.
Ingredients and spices that need to be Take to make Chicken Lollipop:
- 10-12 chicken lollipop pieces
- For 1st Marination
- 1/2 tsp turmeric powder
- 1/2 tsp red chilli sauce
- 1 tbsp Kashmiri red chilli powder
- 1 tbsp Tandoori Chicken Masala
- 2 tbsp ginger garlic paste
- 1 tsp soy sauce
- 1/2 tsp lemon juice
- 1 tsp salt
- For 2nd Marination
- 2 tbsp corn flour
- 2 tbsp rice flour
- 2 Tbsp maida
- 1 Tbsp Kashmiri red chilli powder
- 1 tsp red chilli powder
- 1/8 tsp Salt
- 1/2 tsp Black pepper powder
- 1-2 Tbsp water (Quantity of water as per required)
- as required Oil for deep frying
Instructions to make to make Chicken Lollipop
- Clean Chicken Lollipop and wash 2-3 times in water.
- 1st Marination:- Place the lollipop on the plate and add turmeric powder, red chili sauce, 1 Tbsp Kashmiri red chili powder, Tandoori chicken masala, ginger-garlic paste, soy sauce, lemon juice, and 1 tsp salt, mix well.
- Cover with lid and marinate for a minimum of 20 mins. Or you may also keep marinating for a couple of hours in the refrigerator. I kept marinating Chicken Lollipop in the refrigerator for 2 hours.
- For 2nd Marination:- Combine cornflour, rice flour, maida, 1 tsp red chili powder, 1 tbsp Kashmiri red chili powder, 1/8 tsp salt, black pepper powder well. Add this mixture into marinate chicken lollipop and mix well. Add little by little water to it. Mix all together to get a semi-thick paste-like marinade.
- Adjust the quantity of water required, as there will be some moisture from the earlier marinade. Keep aside for 10 mins. Just before frying Lollipop pieces, re-shape them by spreading marinade.

- Heat oil in a Kadai and deep fry Chicken Lollipop till crispy and golden brown from both sides. Then remove these fried lollipops on absorbed paper.
- Wrapped the exposed bone in aluminum foil. Serve hot Chicken Lollipop with schezwan sauce.
