  2. 1 cup sugar
  3. 2 tbsp clarified butter or ghee
  4. 15-20 cashews
  5. 1 tsp green cardamom powder
  6. Pinch orange food colour

  1. Thoroughly wash the sago with 5-6 times or until the water become transparent. Now soak it for 7-8 hours or overnight adding water to the level of sago. Roughly chop the cashews and keep it aside.
  2. Now in a pan add 2 tbsp ghee and fry the cashews until beautifully golden brown. Now take it out in a bowl and in the remaining ghee fry the sagos. The flame must be on low from starting till the end.
  3. Fry the sagos until transparent and become sticky. It will take 8-10 minutes. Now add sugar to it and mix well. The sagos will start to become liquidy as the sugar melts. Now add the food colour it's totally optional you can skip it or use any colour of your choice. Now add the cardamom powder this is also optional but it gives an awesome taste to the laddoos.
  4. After this add the fried cashews and mix very well. Cook it till it start to leave the pan and the ghee comes on the base of the pan. Immediately off the flame don't cook it further after this point else it will become chewy. Transfer it to a plate and allow it to slightly cool down to the temperature that making laddoos are easy. Sagos are sticky so if you find difficulty in making laddoos keep it in the refrigerator and then make laddoos.
