Ingredients and spices that need to be Make ready to make Gajar ka Halwa:
- 2 kg Carrots (grated)
- 2 kg Milk (boiled)
- 1 & ½ cup or to taste sugar
- 1/2 cup Khoya
- 1/2 cup or as required desi ghee
- 1 tsp Nutmeg powder
- 2 tsp Cardamom powder
- Almonds for garnishing
Instructions to make to make Gajar ka Halwa
- Rinse, peel and grate carrots. In a pot,add carrots and heat up on high flame for 2-3 minutes.
- Add milk (boiled) and bring the whole mixture to a boil then mix it.
- On a medium low flame, uncovered, grated carrots will cook in the milk and the milk starts to reduce and evaporate.
- Now cook on high flame and keep on stirring in between. When all milk evaporates, add sugar and give it a good mix.
- Keep stirring and continue to cook on a high flame. Add khoya,ghee and mix well. Towards the end,add cardamom powder,nutmeg powder and dry fruits/nuts and give it a good mix. Cover and put it on simmer for 2-3 minutes. Gajar halwa is ready.
