- 500 gms Mangoes
- 150 gms sugar
- 1/2 tsp Salt
- 1/2 tsp Black salt

- Now cook the mango pulp nicely and add sugar keep on cooking till the mango pulp becomes thick and there is a shine. Keep a lid handy to put in front. As the puree gets thicker it splits here and there. So one has to be a bit careful while cooking it. Add both the salt, lemon juice mix nicely.
- Drop little puree on plate to check it's done or not. Pour the pulp on the prepared greased plates and spread it nicely and evenly with the sheets with the muslin cloth or with the seive so that no dirt is stuck on them.How to check If it's done,? when you touch them if they do not stick to your finger but you get a gel feeling it means your sheets are ready with the help of knife very gently scrape it from the edges of the plate and then slowly pull them apart from the plate to get the sheets.
- Now to get a layer kind of candy either put all the sheets dried one on top of the other else in each plate cut in squares and do the layering by keeping them one on top of other. You can cut them in vertical and horizontal lines,you will get small squares depending on the thickness you want to keep for the candy. - Notes 1) Do not spread it too thin that it becomes difficult to scrape.and at the same time do not keep it too thick that it does not get dried nicely. 2) I get a good sunlight at my place so overnight under AC and next day under sun, got me nice dried sheet.you will have to check the time your sheets take to dry 3) Check the sweetness of your mangoes. If they are tangy add Sugar accordingly.mine were sweet and this quantity of sugar was perfect.
