  9. 1/2 cup, sugar

  1. To make syrup add sugar and water in a pan.Cook for3-4 min.or till Syrup becomes 1 string consistency.
  2. To make rabri,boil milk in a karahi.Cook for 10- 15 min.or till the milk becomes thick.Switch off the gas.
  3. Take ghee in a bowl,mix it with ice cubes until it becomes light and whitish.(rub it with your hand)
  4. Add all-purpose flour in batches,mix with hand.
  5. Add chilled milk and mix.
  6. Now add water little by little and whisk.To make smooth batter,strain it.
  7. Add lemon juice and mix.
  8. Heat oil or ghee in a deep pan.When the oil becomes super hot,pour 1laddle full batter from a height of at least 6 inches.carefully.(in a constant flow)Use small ladle.Repeat this process for 5-6 tlmes to make ane piece of ghevar.
  9. Fry it from both the sides.Scrap frm the sides and flip over with the help of a knife.
  10. Take out and keep them in a steel strainer so that extra oil drain out.
  11. To finish,take one ghevar,pour sugar syrup over it and spread rabri over it.
  12. Garnish it with some chopped almond and silver vark.
  13. Your royal sweet of Rajasthan is ready to serve.
