  1. Soak split moong dal overnight or at least 4 hours. Wash the dal 3-4 times and strain out the water. Boil a cup of milk till reduced to half and thick or add khoya. Adding homemade kheer or khoya and milk gives this halwa a rich flavor and texture.
  2. Grind dal till a grainy texture is formed.
  3. Boil sugar in 1/4 th cup water in a wok.Set aside.
  4. Heat ghee in a non-stick pan. Add semolina and fry lightly. Add moong dal paste and toss till ghee separates and there is no more raw smell of dal. This procedure is important. It has to be done on low flame. Dal will tend to become lumpy. Breaking the crumbled moong dal with the back of a spatula has to be done to get an even texture.
  5. Keep cooking the dal till colour changes. Add sugar syrup,milk and kheer or khoya and stir constantly. Add crushed cardamom powder, some more ghee and chopped nuts and raisins. Saffron soaked in warm milk may be added, but optional.
  6. Keep stirring till halwa leaves sides of the pan. Remove from heat and serve delicious rich and aromatic moong dal halwa hot as a dessert after meals.
