- 1-1.5 liters Milk -(3 glass)
- 100 g Sugar -
- 200 g Condensed milk/ Milkmade -
- 100 g Powdered cashewnut -
- 2 Tbsp Milk powder-
- 2-5 Tbsp Ghee -
- 1 pinch salt
- 1tsp Cardamom- (optional)

- Take a pressure cooker or a deep bottom utensil(Kadhai), add 2Tbsp of ghee,keep on low flame then add all the grated carrot and mix properly.*This is the most important step as this will bring out the flavors of our Gajrela! Now add 3 glasses of milk in this mix Let it cook for 20 minutes or till carrot softens & rawness of carrot is no more! (for pressure cooker- 3 whistles)
- Now, you can either cook in the same cooker or transfer it in a kadhai! For some space to turn the mix over &over again till all the milk is absorbed and you get such a consistency👇🏻
- Now it's time to add some sweetness *(but before adding sugar make sure the grated carrots are all cooked up & soft! If not then cook for some more time...as after sugar is added then carrots won't cook!! So complete the cooking & softening part before adding suga...) Add 100g sugar, mix properly...you will see the change consistency(more liquid in consistency now!)
- Don't worry..your Gajrela will be of correct consistency, that of a halwa! Cook for 10-20 min on low flame and keep mixing & add a pinch of salt...slowly there will be change in consistency
- Add 2Tbsp ghee in a pan & add powdered cashew nuts, another dry fruit you want. Roast for 5-7 minutes....then add this in the carrot mix. (Roasting these nuts in ghee will add more flavor to our Gajrela!)
- Mix it all over again & keep in low flame. Add 200g condensed milk, and mix properly. Let it cook for 10 minutes.
- Add, milk powder 2Tbsp & mix, add cardamom powder(optional)
- Cook for 5-7 minutes on low flame & decorate it the way you desire...I have done here with cashews & cardamom & Voilà! Our Gajrela is ready to serve! Enjoy cooking this love of winter!
