Ingredients and spices that need to be Take to make Rabdi Jalebi:

  1. For Rabdi..
  2. 1 litre full fat milk
  3. 12-15 saffron strands
  4. 50 g sugar or as per taste
  5. 1 tsp cardamom powder
  6. 2 tbsp pistachios
  7. For jalebi..
  8. 3/4 cup All-purpose flour/ maida
  9. 1/4 cup split black gram/urad daal
  10. 1 pinch organic yellow food colour
  11. 1/2 cup curd
  12. 1/8 tsp baking soda
  13. as required Ghee or oil to fry jalebi
  14. For sugar syrup.
  15. 1/2 cup sugar
  16. 1/2 cup water
  17. 1/2 tsp cardamom powder
  18. 5-7 saffron strands

Instructions to make to make Rabdi Jalebi

  1. For Rabdi....Heat milk in a heavy bottom kadai. Once milk comes to boil, turn the flame on low. Add saffron strands. Cook until the milk reduces to half, stir often.
  2. In a bowl add 4-5tbsp milk and cornstarch, whisk till smooth and lumps free. Add this mixture to the milk, stir continuously. Add sugar, cardamom powder and chopped pistachios. Stir continuously and cook until milk reduce to 1/4th of its original quantity. Turn off flame. Rabdi is ready. Once it's cool completely, keep Rabdi in refrigerator before use.
  3. For Jalebi.....Soak daal for 2-3 hours. Then grind to make a smooth paste. Keep it aside.
  4. Now In a pan add sugar, water, saffron strands and cardamom. Cook till sugar dissolve and syrup becomes sticky.
  5. In a bowl add daal paste, maida, curd and organic food colour. Mix well add some water if required to make a smooth,lumps free batter. The consistency of batter should be pouring.
  6. Add baking soda and mix well. Transfer the batter into a piping bag or jalebi maker or you may also use milk bag.
  7. Heat ghee in a flat pan. Keep the flame on low-medium. Make jalebi and fry till golden brown and crispy from both sides. Remove it from ghee and immediately dip jalebi in luck warm sugar syrup. Keep it in syrup for few seconds and take it out.
