Steps to make to make Instant Jalebi

  1. For Sugar Syrup:- Boil water and sugar in pan over medium-high flame until the sugar dissolves in the water. Next add 1 tsp milk to help remove impurities from the syrup. The scum gather on top should be removed using a spoon. Sugar Syrup consistency should be close to 1-string. Add cardamom. Turn off the flame and set aside.
  2. For making Jalebi batter:- In a bowl add Maida, curd, cornflour, 3 times 1/4 tsp white vinegar, orange food color. Mix the dry ingredients well. Add baking soda and baking powder. Mix it well.
  3. Add a little water at a time slowly to adjust a medium (thick flowing) consistency without any lumps.
  4. To fry Jalebi: Pour the batter in piping bag or sauce bottle. Cut the tip of the piping bag to the desired thickness of jalebi. Heat the oil in a frying pan and add 1 tbsp ghee to give ghee flavour.
  5. Now start piping the jalebis. To make the better shapes jalebi, make sure the tip of the piping bag is close to the oil. Fry it on each side till it become crispy.
  6. Once done, take them out and dip them in the warm Sugar Syrup. Leave them for about 20 seconds to soak the sugar syrup.
  7. Take them out of the syrup immediately.
  8. Place jalebis on serving plate. Garnish with chopped Pista and serve it.
