- Take a bowl, add cournflour powder to it. Add 1 & half cups of water. Mix it well. Keep it aside. Grease a tin with some oil and spread some chopped nuts over it. Keep it aside too.
- Now heat a pan, add sugar and 1 cup of water to it. Let it boil then add lemon juice to it. Give it a mix. Boil it for 5 mins more.
- Then slowly and gradually add prepared cornflour slurry to the sugar syrup. Keep stirring continuously. At this point of time, keep the flame low & keep stirring continuously so that the mixture doesn't gets lumpy. Keep stirring, after some time you will notice that the mixture will turn translucent. Keep stirring for 5 more mins.
- Then add a tbsp of ghee. Keep stirring continuously until the ghee gets absorbed by the mixture. Then again add a tbsp of ghee and mix it until the ghee is absorbed completely. Repeat the same process, 3 to 4 times, until the ghee gets absorbed completely by the mixture. Keep the flame low.
- This process will take about half an hour. Keep stirring continuously. Now add red food colour to it. Mix it well.
- Then add rose and kewra essence to it. Mix it & add elaichi powder to it. Finally add roasted chopped nuts and melon seeds to it. Now give everything a good mix.
- Keep stirring continuously until the mixture & the ghee starts leaving the pan and it becomes lumpy. It will take 15 more mins to complete this process.
- Now pour the mixture into the greased pan and let it set. Let it come to the room temperature then demould it and cut it into pieces. I have wrapped each of them into a wrapping paper so that it doesn't gets stick to each other and to get a halwai-like feel.
